
Homemade corned beef help?
How much Morton cure powder should I use to substitute for 1 Tbsp of Insta Cure #1 or Prague powder? Want to do a wet brine with beer etc. (in Bon Appetit this month). Also do you think rump roast would make good product? Brisket is so stringy and fatty and hard to slice.
If you buy a quality brisket and cut it against the grain...it wont be stringy or fatty...no rump roast wouldnt work..although im sure you can pickle a rump roast if you'd like!!
