What a tool. 1/2 lb of crystal 40 is not the same as 1 lb of crystal 20. Was that a joke? Why are you so obsessed with head retention?
You’re comparing 2 different recipes. You don’t know enough yet to be able to translate extract to all grain. Your complete mangling of the extract grain bill exemplifies this. And then you completely change the hop schedule and expect them to be the same? What an idiot.

@ChadzBeerReviews Hey man.. it’s a Bell’s clone. I added some dark malts just to color. This Bell’s clone is known to taste exactly like the original to the point you can’t tell them apart. But I could taste the roast/chocolate from the dark malts that threw off the balance of the beer. :( Everyone said that the Carafa III used in the way I used it would not impart choc/raost flavors. It’s not strong, but it is there in the background.

The beer *IS* good though trust me.

I don’t understand the point of this series. TSA you asked for a recipe (actually you made it a challenge) so the highest rated recipe was chosen. Great, looks like a good one. But than you change it to fit what you have on hand. This should be a “hey I’m too lazing to go to the store to do the real recipe so I’ll just brew with what I got” series

PEI–Yes it’s quite easy to cherry pick comments to support your cause. With just a 2 minute search I found one to support mine. This was located on homebrewtalk, it was a reply that someone’s shop gave them on the subject: “LME is of better quality than DME because of the drying process. However, LME is difficult to store and if not properly stored, tends to go “bad” fast.”

The problem with our old pal TSA is, he doesn’t speak from experience. The only LME he’s ever worked with was Cooper’s and that bulk he bought that was who knows how old. The only DME he’s ever used was 500g with a Cooper’s kit (not enough, BTW). He cherry picks quotes and opinions that happen to agree with him. He does the same thing with Beer Advocate. He’s been brewing less than a year, fucked up most of his batches, and is now on here telling people how to brew.
